This is the first meal we made in our new home. I would have loved to have a real celebratory meal where I planned and cooked something fabulous, but when you just finished moving, and your kitchen is only half put together you make what you can. That being said, I don’t know why I always use this as my fall back meal when it is so delicious! Whenever I am crunched for time, or don’t really feel like cooking, a variation of this recipe is what I will end up making.
Ingredients:
1lb ground beef
2 cloves of garlic, crushed
1 yellow onion, diced
1 head of broccoli, chopped
3 carrots, pealed and chopped
1/4 c. water
2 Tbsp. red palm oil
2 Tbsp. Coconut aminos
4 Tbsp. olive oil,
6oz. tomato paste
Salt and Pepper to taste

6oz. tomato paste

Brown meat in a frying pan. Right before the meet is fully cooked drain out any extra grease and stir in the onions. Cook until onions are slightly translucent.
Meanwhile, in another deep frying pan, add 2 Tbsp. of oil and the crushed garlic. Let the garlic cook for about 3 minutes before adding the carrots, broccoli and water. Cook covered for 15 min on medium heat or until the broccoli is done. Remove cover, add veggies to the meat mixture. Mix in the tomato paste, red palm oil, coconut aminos and remaining 2 Tbsp. of olive oil until everything is well coated. Add salt and pepper to taste.
