When you adopt a Paleo lifestyle there is a lot of cooking and planing involved. Sometimes you just don’t feel like cooking a big meal or have time to get to the store. Last week I was having one of those days… I looked in the fridge to see what we already had on hand and tried to come up with a meal. That is what inspired this simple update to a classic burger and fries. My husband said I hit it out of the park with this one and requested we keep it in a rotation so I made it again just the other day. Instead of onions, I used leaks. Instead of sweet potato fries, I used carrots to add a sweet flavor. The seasoning I came up with takes the place of your standard mustard… Check out the recipe and see what I mean!
Ingredients (makes 6):
2 Lbs. Ground Beef
6 Farm Fresh Eggs
Butter or Ghee
2 Leeks
6 Med-Large Carrots
4 Tbsp. Olive Oil

Spice Rub:
2 tsps. Onion Powder
2 tsps. Ground Mustard
1/2 tsp. Celery Salt
3/4 tsp. Ground Black Pepper

3/4 tsp. Ground Black Pepper
For this recipe you will only need the whites of the leeks so remove both ends. Cut the leaks in half length once, then again so that you end up with long thin leek noodles.
While the noodles cook, mix all the spices for the rub together. Then, divide the beef and make 6 burger patties. Sprinkle the spice mixture onto both sides of each burger. Cook the burgers to your liking using a grill or skillet. Last, fry the eggs in a little butter or ghee. Once everything is cooked, place some of the leek and carrot noodles on a plate, then add the burger and top it off with an egg.
