Paleo Sweet Apple Sausages

I love when I get a Sunday morning at home to relax and really take time to enjoy breakfast, in a leisurely way.  One of my favorite morning side dishes is Sweet Apple Sausage. Here is what you need to make them:

Ingredients:
1 lb. Ground Pork
1 tbsp. Apple Cider Vinegar
1 tsp. Ground Sea Salt
1 tsp. Ground Black Pepper
1/2 tsp. Ground Mustard Seed
1 Red Apple peeled, minced
1/4 tsp. Cinnamon
1/2 of one small Sweet Onion, minced
1 tsp. Coconut Oil (for the frying pan)
Mix all ingredients (except the coconut oil) together in a bowl mixing until well combined. I find that it is is easiest to combine the sausage mixture with your hands. Separate into 6 sections to form small patties.
Heat coconut oil in a frying pan on medium heat. Once the oil has melted add your sausage patties. Cook the patties about 4-6 min per side, flipping half way. Each side should get slightly golden in color. Cook them a bit longer as needed until the meat is no longer pink inside.
