Paleo Fried Green Tomatoes




One of the perks of moving to the country is that there are farm stands everywhere! I love being able to buy local. It is nice to know where my food comes from while at the same time support local farmers. Another perk about buying local is that you are always buying what is fresh while it is truly in season. It can also be exciting (not in the same way that a roller coaster is exciting, but this is small town fun that we are talking about here) to see what is new each time you stop at the farm stand. The other day when I passed a local farm stand they had a bushel of green tomatoes!  Fried green tomatoes anyone?


This recipe is for one green tomato. Multiple the ingredients by the number of tomatoes that you are using. Mix together the following:
1/4 C almond meal
A dash of nutmeg
1 tsp onion powder
1 tsp nutritional yeast (optional)
1/2 tsp ground mustard
1/2 tsp garlic powder
1/4 tsp celery salt*
1/4 tsp ground black pepper
I love the taste of celery salt, but you can use sea salt if you prefer.
Whisk one egg.
Heat 1/4 cup of olive oil in a frying pan on medium heat. Slice your green tomato thin, about 1/4 inch thick. Dip each side of the slice of tomato into the egg wash then drench in spice mixture. Fry the tomato slices, flipping half way, until slightly brown and crispy on both sides. Remove from the frying pan and place on a place covered with a paper towel to soak up any extra oil much like you do when cooking bacon. Serve hot, crispy and delicious!
