Paleo Sweet Potato and Pecan Salad


Right now in New England we are in the middle of a heat wave! Nothing says summer like a hot day and a backyard barbecue. Impress your friends with this new take on a potato salad. 




Ingredientes:
1 Large Sweet Potato
1/3 Cup Pecans, Chopped
1 Tbs. High Quality Mayo
1 Heaping Tbs. Fresh Chives, Chopped
Fresh Ground Salt and Pepper to taste

• Peel, cube, and boil the sweet potatoes until just cooked.
• Drain and allow to cool
• Place cooled potatoes in a bowl, mix in pecans, mayo, and chives
• Salt and pepper to taste
